PRODUCING METHOD

The harvest is hand-picked in two passes to select the ripest grapes. Grapes are pressed immediately upon arrival at the winery, and juices are promptly cooled to prevent oxidation. Juices are quickly transferred to barrels for the initial fermentation, followed by a 14 months aging for 14 months in barrels

Generous and velvety with a woody finish

Pan-seared scallop, sea-food risotto, zander with beurre blanc, poultry with cream and mushrooms.
