PRODUCING METHOD 

Selection of plots with optimal exposure and deep clay-limestone soil which yield a more concentrated and aromatic juice. Mechanical harvest to ensure optimal ripeness. Fermentation in ovoid tanks for a gentle maceration that is more delicate on the grapes. Aging continues in these ovoid tanks, where micro-oxygenation and natural convection occur, similar to what happens in barrels. A light fining before bottling ensures a brilliant and silky color.
